Every girl deserves a Pink Pony Birthday Cake

Kate was born when I was working for Mademoiselle Magazine, a Conde Nast publication.  I thought it would be fun to dress her in the outfit of the day -- white t-shirts and little black dresses.  I was NOT going to succumb to pink and frills. I figured that since my husband worked at home and took care of her during the day, she'd become more of a Tomboy.  I was certainly wrong -- Kate was a true girly girl, who loved pink tutus and princess wands, and, of course, ponies.

For her birthday one year I made her a "Pink Pony" birthday cake.  The mane was made from bubblegum tape, and the eye from a junior mint.  Pink icing and sprinkles made it glitter, and I served it on a box decorated with pink and white polka-dotted wrapping paper.  It was a hit!
